From the chef's side of the pass
Our Executive Chef grew up on the food of these hills — dal cooked over slow fires, greens picked the same morning, spices ground by hand because that is how his grandmother did it. After years in city kitchens, he came back to cook the way the Terai eats: patiently.
The kitchen runs North Indian, South Indian, Chinese and Continental — but ask him what to order and he will point at the kadhai paneer, the house argument-settler, and whatever the garden gave up that morning.

Farm to table, honestly
The kitchen garden supplies herbs and seasonal vegetables straight to the menu; what it cannot grow, Patkote's farms usually can. Milk from the village dairies, mangoes from the orchards our cycling trail rolls past, and compost from the kitchen closing the loop back into the soil.
